We start chopping the clean leek and carrots, putting them to poach in a large pan or wok with extra virgin olive oil. Once the carrots are crispy, add the chicken breast pieces cut into large pieces.

While the chicken slices are changing color, we go peeling the mushrooms with a sharp sprig and very carefully cut them into thick slices and add them to the pan where we have the chicken and vegetables.

I used three teaspoons of salt, three of brown sugar, 1 dried tomato crushed in the mortar, 5 black pepper berries, 5 allspice, dried orange peel, nutmeg and 2 anise stars, crushed all until reduced to powder. Then I added 2 tablespoons of dessert grated coconut and a touch of nutmeg and another of cinnamon.

When the chicken was already taking color, we added a peach peeled and cut into pieces and add the coconut milk, allowing the different ingredients to mix well. Let the whole cook for about ten minutes and cover to rest our chicken stew until serving time.
