Today I bring you a dessert for adults, some mojito cupcakes that can become the kings of your summer parties. With white rum, brown sugar and lime, these cupcakes go from being born as an innocent cupcake to become an explosion of flavors just by adding small amounts of these ingredients.
The preparation of cupcakes and their coverage is simple, although it helps a lot to have a mixer with a shovel accessory that will facilitate your work especially when assembling the butter that covers them, so if you can have it I advise you. The recipe I give you is for a small amount, but you can double or triple the ingredients if you want to make more of them for a celebration.
Ingredients for eight cupcakes
- For cupcakes: 100 g of flour for biscuits with built-in yeast, 100 g of sugar, 100 g of butter at room temperature, 2 L eggs, 1 tablespoon of milk, 1 tablespoon of lime juice, zest of a lime.
- For coverage: 125 g of butter at room temperature, 200 g of icing sugar, 1 tablespoon of lime juice, 1 tablespoon of milk, 1 tablespoon of white rum, some fresh mint leaves.
- For the bathroom: 50 g of brown sugar, 3 tablespoons of lime juice, 3 tablespoons of white rum.
How to make mojito cupcakes
We will begin preheating the oven to 160 degrees with turbo or 180 if it is with heat up and down. We place eight cupcake papers in a metal mold intended for muffins.
In the glass of our blender we put the butter in pieces and the white sugar, we beat with the shovel accessory for two minutes until the butter doubles its volume and turns pale. Lower the speed of the blender and add the beaten eggs one by one, not throwing the next until the previous one is mixed.
We mix the flour in the dough and finally the milk and lime juice. Stir just enough to incorporate all the ingredients. We fill ¾ of capacity of each cupcake capsule, better with an ice cream rationer so that they go in all the same amount. We bake for twenty-five minutes. Once the time has elapsed, let them cool inside the pan for five minutes and then pass them over a rack.
To make the cover, put all the ingredients in the blender glass and beat for five minutes at medium speed. Put it in a pastry bag with a curly nozzle, in my case I used the 2D number of the Wilton brand.
Before decorating them bathe them with a brush and a little white rum, sprinkle brown sugar on its surface, again bathe them with lime juice and again other brown sugar sands. Then, cover the surface and make the decoration that you like best and accompany them with a leaf of fresh mint and grated lime.
