Let's bet on simple stews, such as those offered by our companion María Pimientos. This recipe for green beans with roasted peppers It is a healthy way to combine some of my favorite dressings, roasted peppers, with fresh green beans. With this we will get a healthy, light and complete dish, especially if we add some diced ham.
Ingredients for 4 people.
1 kg red peppers, roasting, ½ kgr. green beans, fresh, 1 onion, 100 gr. Serrano ham, diced, 1 teaspoon sweet paprika, pepper, water or chicken broth, olive oil. 4 eggs (optional).
First you have to roast the peppers. To do this we put them in a baking dish, sprinkle them with a thread of oil and a little fat salt. We roast at 220º for 30-40 minutes, turning halfway through cooking. Take out and let cool.
Cut the beans into pieces of 2 cms. Steam or in abundant water, but not too much, that they remain al dente. I prefer steamed, as they keep their juices better.
Jump in a deep pan or clay casserole, the onion finely chopped with diced ham. At 10 minutes, add the peeled peppers and cut into strips, with their cooking juices, and cooked beans. Stir a few minutes and cover with a little broth or water, just enough to cover the beans.
Add the paprika and a pinch of ground pepper. Let simmer until everything is very tender, about 8-10 minutes.
Preparation time: 25 minutes, plus 30 minutes of roasting the peppers. Difficulty: Easy
Serve in a clay pot or in individual dishes. If you want you can add one egg per person and let it curdle in the oven for a few minutes, until the egg has completely set.
