It is a rich, colorful and worthy dessert of the sweet tooth, the Coffee flan with vanilla and mint It is ideal for a holiday, very easy to prepare and with a great result.
The ingredients ¼ liter of milk, 1 vanilla bean, 4 yolks, 1 tablespoon of ground coffee, 1 tablespoon of mint liqueur, some mint leaves, 13 grams of jelly in leaves, ¼ of liter of whipped cream and sugar.
The preparation In a saucepan, heat the milk next to the vanilla pod, when it boils, strain it and set aside. Leave the jelly soaking in water and meanwhile, beat the yolks with 4 tablespoons of sugar, then add the milk very little by little and while stirring. Heat the resulting mixture for a couple of minutes and set aside. Dissolve the coffee in a cup of hot water and add the gelatin well drained while stirring until it dissolves and let cool.
Divide the egg and milk mixture in two, in one of the parts, add the coffee and stir well. Distribute this coffee mixture in four flaneras, but only halfway, then put the flaneras in the fridge for about two hours.
Add the whipped cream to the other part of the mixture and finish filling it with the flannels that you reserved in the fridge, then return them to the refrigerator until they set well. Prepare now the sauce with ½ glass of water and some mint leaves, simmer until a third is reduced.
Strain the water with mint and add the mint liquor and a spoonful of sugar. To serve, unmold the custards on the plates and add the sauce, finish the dessert decorating with a mint leaf.
Tasting It is a great dessert, soft and very tasty. Each spoonful of flan, a little bit of peppermint essence, is a great combination.
